Eggs Really Are Incredible!

If someone asked me to describe eggs in three words, I would say, Easy, Healthy and Delicious!! What more could you ask for, if you have eggs as your breakfast (or any meal)? You could consider eggs as super foods since they are rich in various nutrients which are required by our body. Eggs, when we think about it in a different perspective, we can say that eggs are something which brings a new life into the world, and it nourishes that life until it reaches a stage where it can move on by its own. So, we could consider it as the symbol of origin and new life partly since it provides all the nourishment needed. Other than that, you could also say that it is because, during the winter, chickens do not usually lay many eggs. The return of the light leads to the return of eggs.

Eggs Are Loaded with Nutrients
Eggs are packed with vitamins. They are mainly rich in the Vitamin B family. Additionally, it also contributes vitamins D and A. The egg yolks are one of the excellent sources of B12, riboflavin, and choline. It helps in the development of brains in utero. On the other hand, it also protects us from age-related loss of memory. As with the minerals, eggs is especially rich in selenium. Carotenoids, Lutein and Zeaxanthin, are the other minerals which are also found in eggs. It shields our eyes from macular degeneration. Even when it comes from vegetable sources, you can say that lutein appears to be absorbed better from the eggs. Essentially all these nutrients are present in the yolk of the egg.

There are some eggs which have significant quantities of omega-3 fats. In order to get these eggs, which are rich in omega-3 fats, they are being fed with flax seeds so as to raise their level of omega-3 fats in the eggs. Moreover, the hens that have been allowed to feed on a species of natural food for them, which includes greens and grubs, so as to produce eggs which contain more omega-3 fat.

These type of hens are called “Pastured eggs”. You should also note that “free range” chickens typically don’t share this kind of diet. One egg provides around 5 grams of fat which includes 1.5 saturated and two monounsaturated, about half a gram of carbohydrate and 6 grams of protein.

Is it Bad to Eat Too Many Eggs?
Eggs were considered unhealthy since it contained a lot of cholesterol, though no one had the proof or clear evidence for such a statement., However, as the studies progressed, a number of advantages were found relating to eating of eggs. Eating eggs helped in the improvement in blood lipids. Rather than increasing our bad cholesterol levels, eggs assisted in raising our good cholesterol level, thus supporting our body to stay fit.

Eggs in a Low-Carb Diet
Did you know that eggs are a low-carb source of proteins which comes with low cost too? Keeping that apart, they also have advantages particular to low-carb diets. Egg whites can contribute a structure to baked goods prepared with nontraditional ingredients. These ingredients include flaxseed meal and nut flours. In this flax meal focaccia bread, and can give the basis for desserts like sugar-free macaroons or snow pudding.

Egg Selection
When refrigerated, eggs have a shelf life of around 60 days. However, in the United States, the “sell by” date is not more than 30 days after the packing date of the eggs. According to the USDA, they should be used within 3 to 5 weeks after the date in which it was packed. There are some hens which are fed with flaxseed meal which helps in the increased production of Omega-3 fatty acids in the yolk. However, if you eat the flax yourself, then it would be a lot less expensive.

Storage and Handling of Eggs
You get the eggs in cartons, and it is best to store the eggs in that same carton, in the coldest part of the refrigerator. Before you buy, you need to make sure that there are no cracks on the eggs. You should cook your eggs thoroughly so as to secure protection against disease such as salmonella, even though it is relatively rare. Egg whites can be refrigerated for up to one year. If you really want to freeze the egg yolks, then you may need to add a quarter teaspoon of salt into each. Hard-cooked eggs do not freeze well. They will keep for up to a week in the fridge.
